Fingerlime, Lemon and Gin JelliesIngredients:
Method: Combine sugar with juices and 1 cup of water in a 1 large finger saucepan and bring to the boil, stirring to dissolve the sugar. Remove from the heat, add the gin and enough water to make 1 litre of liquid, then stir in the rinds and the finger lime pulp. Place ½ cup water in a small heatproof bowl, sprinkle gelatine over and leave to soften, then place the bowl in a small saucepan of simmering water and gently stir until the gelatine dissolves.
